Paleo Mango salad

In Sydney we love our seafood. Particularly around Christmas time. Lucky for us, we are surrounded by the sea and fresh seafood is abundant and relatively cheap compared to other places in the world. A weekend before Christmas the fish market becomes a crazy buzz.  I heard that they even open for 36 hours straight? Lucky for me I avoided the crowd as I was able to make it prior to the weekend.

So did you make it to the fish market? What are you having for your Christmas lunch or dinner? If it involves prawns, you would LOVE this. It’s totally refreshing and represents the Australian summer. The best thing is, it is TOTALLY simple.  You would probably realise by now that I only select simple recipes.   What is it you say??  Mango Salad!!!

Paleo | Diary Free | Gluten free | Vegan

Ingredients:

  • 2 x mangoes
  • 1/4 spanish onions – Diced
  • 1/2 cup coriander – Roughly chopped
  • Jalapenos (de-seeded and diced)
  • 1 tablespoon olive oil
  • 1 lime juice
  • Salt and pepper to taste

Preparation:

  1. Dice up your mango
  2. Add onions, coriander and jalapeno
  3. Add 1 lime, oil, salt and pepper.

Serves: 2-3

I would recommend doubling the serving so there is plenty to go around. Best served with freshly cooked tiger king prawns and Oysters as your entree. Yumm!!!!

Note: Mixing savory and sweet flavors always work really well. The Jalapeno is the magical ingredient that gives it that extra kick. Hope you enjoyed this recipe as much as I did.
